Hazelnut cookies


Enjoy these Christmas German Hazelnut Cookies this festive season - they're tender and a little crumbly without being chewy and full of nutty flavor. Plus, this recipe uses only 7 ingredients, is egg-free, dairy-free, gluten-free, and ready in 20 minutes!

ingredients
• 3/4 cup (100 g) ground hazelnuts + 16 whole hazelnuts
• 2/3 cup (80 g) flour I used rice flour
• 1/2 cup lightly stacked (70 g) powdered sugar (I used erythritol)
• 1/2 teaspoon baking powder
• 1/4 cup (50 g) vegan butter (*see notes)
• 1 teaspoon vanilla
• 3 teaspoons orange juice
• 1 teaspoon orange zest (optional)
instructions
1. Preheat the oven to 350°F (175°C) and line a baking tray with parchment paper. I recommend measuring ingredients in grams on a kitchen scale for this recipe.
2. If using whole hazelnuts, process them in a food processor/blender to a coarse powder and then add the flour, sugar and baking powder. Mix again for 20 seconds.
3. Add the vegetable butter, orange juice and vanilla extract and mix until you get a soft dough. If the dough is too dry, add a little vegetable butter.
4. Use a teaspoon of ice cream or a tablespoon to divide the dough. Use your hands to shape the dough into balls and place them on the lined baking tray. Flatten them out a bit and press a whole hazelnut in the middle of each biscuit.
5. Bake the biscuits in the oven for 15-16 minutes. It will still be very soft when you take it out. Let them cool completely and enjoy


Notes
 
• Flour: I made the recipe gluten-free using 80g of rice flour, but you can use regular flour or buckwheat flour. I do not recommend the coconut flour in this recipe because it is very absorbent.
• Sugar: I used erythritol powder to make sugar-free cookies, but you can use powdered sugar if you like. Cookies are less sweet with erythritol powder.
• Vegetable Butter: I used margarine but any vegetable butter should work just fine. Coconut oil (diluted) should also work well.
• Baking time: If you flatten the cookies more, they will be prepared a few minutes earlier. It left mine completely full and thus, I baked it for about 16 minutes.
