#### Ingredients:

- 1 onion, finely chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 stalks celery, diced
- 2 cups (480ml) beef or lamb broth
- 2 bay leaves
- Salt and pepper to taste
- Chopped fresh herbs such as rosemary, thyme, and parsley for garnish

#### Instructions:
1. Preheat your oven to 325°F (160°C).
2. Season the lamb shoulder generously with salt and pepper on all sides.
3. In a large ovenproof pot or Dutch oven, heat the rendered lamb fat over medium-high heat. Once hot, add the lamb shoulder and sear on all sides until browned, about 3-4 minutes per side. Remove the lamb shoulder and set aside.
4. In the same pot, add the chopped onion, garlic, carrots, and celery. Cook, stirring occasionally, until the vegetables are softened and lightly browned, about 5-7 minutes.
5. Return the lamb shoulder to the pot and add the beef or lamb broth, enough to partially submerge the meat. Add the bay leaves.
6. Cover the pot with a lid and transfer it to the preheated oven. Braise the lamb shoulder for about 2 1/2 to 3 hours, or until the meat is fork-tender and falling off the bone.
7. Once done, remove the pot from the oven and carefully transfer the lamb shoulder to a serving platter. Allow it to rest for a few minutes before serving.
8. Optionally, skim any excess fat from the surface of the braising liquid.
